<p>Love is in the air!  February is a great reminder to let those around us know how much we love them.  If you want to bypass the busy restaurants this year,  I have a great suggestion.  Consider making a special dinner for two at home or include your children in your celebration by breaking out the fine china and dine in style in your formal dining room.  This is what I plan on doing with my two valentines this year (my husband, Darren and son, Shelton).  Chef Ryan shares a great 3 course meal for the occasion and Nathan gives us some special wine pairing ideas.</p>
<p>Along with love, I think of romance and what is more romantic than creating a special master bedroom retreat for you and your spouse.  I have a few thoughts to share on master suite design this month.</p>

<div style="text-align: left;">Dust the tuna with coriander, salt and pepper.  Heat 1TBSP of olive oil in a sauté pan over medium high heat.  Just before the oil starts to smoke, place the tuna in pan for 1-2 min. depending on thickness, flip and continue for another 1-2 min.  (Rare-Medium Rare: about 1 min. each side). Take off heat and place on cutting board to rest.</div>

<div style="text-align: left;">Meanwhile, toss remaining ingredients and place in the middle of the serving plate.  Cut the tuna in half, between the sear and plate decoratively on top of the fennel salad.  Garnish with some fennel frawns.</div>

<div style="text-align: left;">Put a rack in middle of oven and preheat oven to 325°</div>

<div style="text-align: left;">Pour cream and orange juice into a 2 quart-sauce pan.  Using tip of a knife, scrape seeds from vanilla bean, if using, into cream and add pod (if using vanilla extract, do not add it yet).  Heat cream and orange juice over moderate heat until hot but not boiling; remove from heat and discard pod.</div>
</li>
<li>
<div style="text-align: left;">Whisk together yolks, granulated sugar, and salt in a medium bowl until well combined.  Add hot cream/orange juice liquid in a slow stream, whisking constantly until combined.  Pour custard through a fine-mesh sieve into a bowl and whisk in vanilla extract, if using.  Ladle custard into ramekins.</div>
</li>
<li>
<div style="text-align: left;">Arrange ramekins in a roasting pan and enough boiling water to pan to reach halfway up sides of ramekins.  Bake until the custards are just set, 25-30 minutes.  With tongs, transfer custards to a rack to cool, then refrigerate, uncovered, for at least 4 hours.</div>

<div style="text-align: left;">Just before serving, sprinkle turbinado sugar evenly over custards.  Move blowtorch flame evenly back and forth close to sugar until sugar is caramelized.  Let stand until sugar is hardened, 3-5 min.</div>

<address style="color: #505050; font-family: Arial; font-size: 12px; line-height: 150%; text-align: left;">This is such a delightful, finely crafted dinner by Chef Abitz … maybe I should hire him!  Please, all of you lovely couples, forego the nightmare and chaos of dinner out for Valentine’s Day … over priced, over booked, fast paced, … I fail to see the romance!  As an alternative, in the calm of your own kitchen, allow Chef and I to provide the “how to”, invite your sweetheart, and the two of you prepare this simple, flavorful, tasty menu paired with wine together, with hopefully, a tad bit of romance to follow.</p>
<p align="center"><strong><em>2009    Gratien &amp; Meyer    Cabernet Franc    Brut Rosé    Sparkling Wine    Samur AOP, Loire Valley, France</em> (23)</strong></p>

<p>Salads are always a challenge regarding wine pairings given the defined “green tones” of the selected mixture of lettuce, frisée, spinach, endive or other chosen vegetables.  You also have to consider the style of dressing, which is the component of this dish that will determine the wine.  As per previous “Wine 101”, remember that acid in wine is Mother Nature’s gift to cuisine and is the “equalizer” when pairing food and wine.  For this dish, I am “back to bubbles” with the selection of a brut rosé sparkling wine (again, brut = not sweet).  Since 1864, Gratien &amp; Meyer has been producing quality wines from the Loire Valley that represent excellent quality, taste, and value.  Produced in the same manner as Champagne, this wine is born from the use of Cabernet Franc that has a defined tart raspberry/cranberry/cherry fruit profile as well as a faint undertone of fresh herbs.  Fresh, “clean”, simple salad + dazzling bubbles = a perfect food and wine pairing.</p>

<p align="center"><strong><em>2010    Domaine de Grandes    Sauvignon Blanc    Sancerre AOP, Loire Valley, France</em> (24)</strong></p>
<p> Fish does not automatically default to white wine (I think pan seared Halibut paired with California red Zinfandel is amazing!).  Again, as per previous, the determining factor regarding wine pairings is what is the accompaniment to the principal component of the dish.  Given the use of white beans, fennel, and black olives, plus the use of both lemon and orange juice/zest, this pairing needs a wine that is defined by acid and minerality.  As such, I must return us back to the Loire Valley with a Sauvignon Blanc from Sancerre.  Sauvignon Blanc from this area is super “clean”, crisp, and bursting with citrus flavors.  Also we have the defined component of minerality … “what is minerality” you say … such a great question with a very simple answer.  Minerality is the component of wine that is responsible for the inorganic texture of rocks, pebbles, and stones.  For Sancerre, the soil profile is defined by limestone, chalk, and flint giving your palate that essence of hiking through a rock quarry.  The Domaine des Grandes is “textbook” Sancerre defined by fruit flavors of tart lime/green apple/bitter lemon, plus lovely dried herbs of parsley/chervil/rosemary, and yes, the rocky, stony mineraltiy.  This pairing will truly compliment the “bright” flavors of this dish.</p>
<p><em><strong>2010 Elvio Tintero    Dolce Moscato    Sorí Gramella    Frizzante    Moscato d&#8217; Asti DOCG   region of Piemonte, Italy (20)</strong></em></p>
<p>As a general rule, when pairing wine with dessert, the wine must be sweeter than the dessert.  As well, a tad bit more “Wine 101” education.  The ancient Romans referred to Italy as Oenotria or “land of vines”.  As a country, Italy is divided into twenty (20) different wine regions and is home to well over a thousand different indigenous grape varietals. The grape varietal Muscat (in Italian, Moscato) is now believed to be the progenitor of all European vinifera (Sauvignon Blanc, Chardonnay, Pinot Noir, Merlot, etc.) and is the oldest domesticated grape known to man.  Regarding labeling, <strong>Moscato </strong>= grape varietal, <strong>di </strong>= “of” or “from”, <strong>Asti</strong> = geographic place name, <strong>dolce</strong> = sweet, and <strong>frizzante</strong> = half-sparkling.  This wine by Tintero “screams” chilled peaches, tangerines, honeysuckle, and sweet cream in a glass … a perfect compliment to the Blood Orange Crème Brûlée.  Everything tastes better with bubbles!</p>

<p style="text-align: left;">When working with my clients to create a beautiful master bedroom retreat, I recommend starting with quality <a title="bedding" href="http://www.robinbondinteriors.com/products/">bedding</a>.  This is a great way to establish a color scheme and design direction.  If drapery will be a part of the design plan, then I highly recommend biting the bullet and going with a higher quality <a title="bedding" href="http://www.robinbondinteriors.com/products/">bedding</a>.  The higher quality offers a longer life that will hold up to the quality and coordination of the drapery.  Drapery is an investment that you will not be changing out for 15 or 20 years.</p>
<p style="text-align: left;">Many times, I hear from people that they don&#8217;t want to invest in good bedding because they like to change it out more often.  Having a “summer” and “winter” look is a great idea and keeping this in mind when planning the drapery is smart.  Other than that, a well designed space should be for the long haul.  A well <a href="http://www.robinbondinteriors.com/wp-content/uploads/014.jpg"><img class="alignright size-full wp-image-3313" title="014" src="http://www.robinbondinteriors.com/wp-content/uploads/014.jpg" alt="014   Robin Bond Interiors

<div style="text-align: left;">The master bedroom and bathroom should be considered one space.  They need to work well together with a cohesive look.</div>
</li>
<li>
<div style="text-align: left;">Blackout drapery is an amazing investment for a master bedroom.  If you have trouble sleeping or if you like to sleep-in  or nap on the weekends, consider investing in blackout drapery.  It is more expensive than something that is just decorative on the windows, but the sleep benefits are amazing!</div>
</li>
<li>
<div style="text-align: left;">Add a sitting area to your master bedroom.  Most of the master bedrooms are designed now with plenty of space to add a nice sitting area for reading and relaxing.  Adding this area to your master suite will give you a comforting place to retreat from your children or other activities going on in the rest of the house.</div>
</li>
<li>
<div style="text-align: left;">Plan the lighting for how the room is going to be used.  A well designed room should have five to seven light sources.  This is especially important in a master bedroom.  I love to read before retiring at night and having a good three-way reading lamp was an important part of my master bedroom design plan. </div>
</li>

<div style="text-align: left;">Instead of art, consider adding dramatic wallpaper, a <a title="fabric" href="http://www.robinbondinteriors.com/products/">fabric</a> treatment, or have a decorative mural painted on your bed focal wall.</div>

<div style="text-align: left;">Adding <a title="fabric" href="http://www.robinbondinteriors.com/products/">fabric</a> panels to a four-poster bed will make you feel like a king or queen.  </div>
</li>

<div style="text-align: left;">Invest in a good quality mattress &#8211; it will make all the difference in how you feel. </div>

<div style="text-align: left;">Interior Designers sell high quality sheets and other linens that are not readily available on the retail market.  Great linens will feel better the more they are washed and used. </div>

Shredded zucchini, garlic and mozzarella cheese rolled in chicken cutlets, then dipped in oil and fresh lemon juice, breaded and baked to perfection! A great way to sneak vegetables into your family’s dinner!</p>
<p>Servings: 8</p>
<h3>Ingredients:</h3>
<p>1 tsp olive oil</p>
<p>4 cloves garlic, chopped</p>
<p>1 1/2 cups (1 medium) zucchini, shredded</p>
<p>1/4 cup + 2 tbsp Romano cheese (or parmesan)</p>
<p>3 oz part skim shredded mozzarella</p>
<p>salt and pepper to taste</p>
<p>8 thin chicken cutlets, 3 oz each</p>
<p>1/2 cup Italian seasoned breadcrumbs</p>
<p>1 lemon, juice of</p>
<p>1 tbsp olive oil</p>
<p>salt and fresh pepper</p>
<p>olive oil non-stick spray </p>
<h3>Directions:</h3>
<p>Wash and dry cutlets, season with salt and pepper. </p>
<p>Preheat oven to 450°. Lightly spray a baking dish with non-stick spray.</p>
<p>In a large skillet, heat oil on medium-high heat. Add oil when hot then sauté garlic a minute, or until golden. Add zucchini, 1/4 cup Romano cheese, salt and pepper and sauté about 3-4 minutes, stirring occasionally. Set aside to cool. When cool, add mozzarella cheese and mix to combine.</p>
<p>Lay chicken cutlets down on a working surface and spread 3 tbsp of zucchini-cheese mixture on each cutlet. Loosely roll each one and keep seam side down.</p>
<p>Combine breadcrumbs and grated cheese in one bowl; in a second bowl combine olive oil, lemon juice, and pepper in another bowl. Dip chicken in lemon-oil mixture, then in breadcrumbs and place seam side down in a baking dish (no toothpicks needed). Repeat with the remaining chicken. When finished, lightly spray with oil spray.</p>
<p>Bake 25 &#8211; 30 minutes.</p>

<p>I posted pictures on Facebook of a recent teen room I completed.  The color scheme is chocolate, lime and orange.  Be on the look-out for a mailer we have going out in January to check out this room.  I got a comment on my Facebook post from an out-of-state builder that orange is the hot new color for 2012.  Sure enough, Pantone&#8217;s Tangerine Tango #17-1463 is the color of the year!   </p>
<p>It is interesting how trends start subtly creeping in long before they have even been declared a new trend.  I started moving in more orange tones into my own home toward the middle of last year.  This is how trends come about.  We long for something new, different &#8212; a change.  The longing for change and the influence of our environment, and things going on around us and around the world, make a strong impact on fashion and home decor.   Read more about what is coming in 2012 in my article, &#8220;Do you want to Tango?&#8221;   </p>

<li>10 lbs Party Wings</li>
<li>1/2 cup BBQ Seasoning</li>
<li>1/4 cup Kosher Salt</li>
<li>1/8 cup Black Pepper, Fresh Cracked</li>
</ul>
<p> <strong>Directions:</strong>  </p>
<p> Season wings with BBQ Seasoning, salt, and pepper on all sides. Smoke at 375 degrees for about an hour. (If you do not have a smoker, you could rub the chicken wings with liquid smoke before seasoning and cooking them in the oven the same way as smoking.) Yeilds: 10 servings </p>
<h2> Roasted Serrano Sauce</h2>

<li>1 cup Serrano Chiles, fresh</li>
<li>1 cup White Vinegar</li>
<li>1/2 tsp Kosher Salt</li>

<div style="color: #505050; font-family: Arial; font-size: 12px; line-height: 150%; text-align: left;">Yet another “home run” dish by Chef Abitz!  He truly does make my job of finding excellent wine to pair with his cuisine easy.  For the month of January, we have a classic dish for you to prepare for the upcoming Super Bowl … spicy, smoked chicken wings.  This dish allows for yet another “Wine 101” lesson is wine and food pairings in which we will emphasize the versatility of high acid whites.  For all of the fans of “simply red and only red”, please forgive, however, this is a chance for you to shed your diffidence and try the “never tried”.  To all, acid in wine is “Mother Nature’s” gift to cuisine.  Acid tapers sweet, “cools” heat from spice, and “cuts” through rich sauces allowing for one’s palate to recharge for the next bite.  As such, the following wines are perfect matches for the “kick” in taste to what Chef Abitz has prepared.</div>

<p style="color: #505050; font-family: Arial; font-size: 12px; line-height: 150%; text-align: left;">Not all wines produced in California are from Napa and Sonoma.  Mendocino, Lake, and Amador Counties all produce excellent wines of varietal character and great price points.  The first Lake County vines were planted in the 1870’s and the largest lake in California, Clear Lake, is also located in this area.  Stephen Vincent wines represent quality, fine craftsmanship, and excellent value.  This Sauvignon Blanc is “textbook”.  Hints of “fresh laundry hanging on the clothes line” with defined acid, plus crisp flavors of lime/green melon/breakfast grapefruit/pineapple plus the absence of any wood.  This is a great example of how a high acid white can compliment spice and “heat” in a dish.</p>

<p>Bubbles, bubbles, bubbles … oh how I love thee!  Far too often, bubbles are incorrectly thought off as only for celebrations, when in fact, are truly one of the greatest of all pairing wines.  The texture of bubbles helps cleanse the palate as well as moderates heat, sweat, and richness in cuisine.  For the above, Solletico is Italian for “to tickle” and is a great reference to the small, prickly bubble profile.  As a plus, this wine is vintage dated (rare for Prosecco!) and is Brut regarding style (remember, Brut simply means not sweet!).  With crisp acid, refreshing bubbles, and tasty “crunchy” fruits of green apple, melon, and white peach, Solletico is a great accompaniment to the spice and smoke flavors of the wings</p>

<p>The bold Pantone color Tangerine Tango #17-1463 can be used in just about any style of decor.  This orange hue adds &#8220;pop&#8221; and excitement.  Pair it with a rich dark chocolate and cream for an energizing room. Other colors that will be popular in 2012 are jewel tones of Emerald, Ruby and Sapphire.  Coral and Amethyst as well as other shades of purple are great for more peaceful schemes.  </p>

<p style="text-align: left;">Glidden Professional&#8217;s color of the year is a blushing, lively, juicy red #B8.38.44.  Like Pantone&#8217;s orange hue, Glidden&#8217;s red is bold.  Red is a powerful mood modifier.  In China, it is associated with good fortune.  Children prefer it to other colors.  Grown-ups feel attracted to those in red.   </p>

<p style="text-align: left;">Whether you like it or not, trends impact design.  I know we all fear that the next design trend will haunt us like that avocado green refrigerator or busy <a title="floral" href="http://www.robinbondinteriors.com/products/">floral</a> wallpaper.  Speaking of wallpaper, I am so thrilled that it is back!  The new look of wallpaper is textural and graphic.  Used as an accent with complimentary <a title="paint colors" href="http://www.robinbondinteriors.com/services/">paint colors</a>, wallpaper adds more interest and is similar in cost to decorative painting.  A lot of the faux painting techniques that have been popular so long are trending out. </p>
<p>We are all still keenly aware of our environment and repurposing.  This coincides with color schemes of earth and sky with soft blues, greens and rich earth tones like chocolate.  Benjamin Moore&#8217;s color of the year is Wythe Blue, #HC143.  By the way, this color pairs well with Tangerine Tango. </p>

<p>Other things to be on the lookout for in 2012 are native prints and geometrics, crewel or embroidery design fabrics, and damask. </p>
<p>Believe it or not, gold is also making a comeback.  This time it has more of a satin or toned down type of finish.  All metallics are hot.  I love to add some bling to room designs for a touch of glamour.</p>
<p>Monochromatic blends of grays and purple tones will work well for a more sophisticated and understated look.  If you are a cool color scheme person, the beautiful gray palettes are amazing!<span id="_marker"> </span></td>

<p><strong><em><span style="text-decoration: underline;">A Dog&#8217;s Purpose</span>? </em></strong><em>(from a 6-year-old).</p>
<p>Being a veterinarian, I had been called to examine a ten-year-old Irish Wolfhound named Belker. The dog&#8217;s owners, Ron, his wife Lisa, and their little boy Shane, were all very attached to Belker, and they were hoping for a miracle.</p>
<p>I examined Belker and found he was dying of cancer. I told the family we couldn&#8217;t do anything for Belker, and offered to perform the euthanasia procedure for the old dog in their home.</p>
<p>As we made arrangements, Ron and Lisa told me they thought it would be good for six-year-old Shane to observe the procedure. They felt as though Shane might learn something from the experience.</p>
<p>The next day, I felt the familiar catch in my throat as Belker &#8216;s family surrounded him. Shane seemed so calm, petting the old dog for the last time, that I wondered if he understood what was going on. Within a few minutes, Belker slipped peacefully away.</p>
<p>The little boy seemed to accept Belker&#8217;s transition without any difficulty or confusion. We sat together for a while after Belker&#8217;s Death, wondering aloud about the sad fact that animal lives are shorter than human lives. </p>
<p>Shane, who had been listening quietly, piped up, &#8221;I know why.&#8221;</p>
<p>Startled, we all turned to him. What came out of his mouth next stunned me. I&#8217;d never heard a more comforting explanation. It has changed the way I try and live&#8230;</p>
<p>He said,&#8221;People are born so that they can learn how to live a good life &#8212; like loving everybody all the time and being nice, right?&#8221; The Six-year-old continued, &#8221;Well, dogs already know how to do that, so they don&#8217;t have to stay as long.&#8221;</p>
<p>Live simply.<br />
Love generously.<br />
Care deeply. <br />
Speak kindly.</p>
<p>Remember, if a dog was the teacher you would learn things like:</p>
<p>When loved ones come home, always run to greet them.</p>
<p>Never pass up the opportunity to go for a joyride.</p>
<p>Allow the experience of fresh air and the wind in your face to be pure Ecstasy.</p>
<p>Take naps.</p>
<p>Stretch before rising.</p>
<p>Run, romp, and play daily.</p>
<p>Thrive on attention and let people touch you.</p>
<p>Avoid biting when a simple growl will do&#8230;</p>
<p>On warm days, stop to lie on your back on the grass.</p>
<p>On hot days, drink lots of water and lie under a shady tree.</p>
<p>When you&#8217;re happy, dance around and wag your entire body.</p>
<p>Delight in the simple joy of a long walk.</p>
<p>Be loyal.</p>
<p>Never pretend to be something you&#8217;re not.<br />
If what you want lies buried, dig until you find it.</p>
<p>When someone is having a bad day, be silent, sit close by, and nuzzle them gently.</p>
